It’s Sunday evening, and in ‘normal world’ (whatever that is) I would have my Monday post ready to go. Now that I’m in chemo world, things are just not normal. Let me clarify, while chemo really stinks, I refuse to allow it to steal my joy; I’m just having to take things at a slower place than usual. *SHUCKS*
I’m planning a summer party for Friday night and desserts are my favorite part. I’m on a cakepop kick so I knew right away I wanted to incorporate them into the desert menu. If you’ve never made a cakepop, no worries, they are easy peasy. Bakerella has the best video tutorial I’ve seen, so I thought I’d share.
I love Bakerlla, it’s an amazing blog with adorable dessert ideas! Last year, I found the recipe for these Ice Cream Cone Cakepops and made them for July 4th; they were a HUGE hit!
I simply followed the cakepop recipe and instead of putting them on a lollipop stick, I set them on the bottom part of sugar cones (I had to break them to make them small enough).
Make sure to use extra melting chocolate to make them look like the ice cream is starting to melt!
I also made July 4th strawberries. I think I found the idea on Pinterest, but it was over a year ago and I can’t find the original pin – BOO!
I’m all about simple and these babies are no exception. Simply rinse off fresh strawberries and pat dry ~ really dry. Next, dip in white melting chocolate (make sure to allow extra to drip off) and immediately dip in blue decorating sugar.
I had extra cakepops so I made them into small truffles and put them on the tray with the strawberries.
Ta-Da!
The great thing about these little treats is, they could be made to go with any color or theme. There are tons of choices when it comes to melting chocolate colors (Michael’s or JoAnne Fabrics), as well as decorating sugar and sprinkles.Do you have a party coming up? Let me know if you give these a try!
Love you more than cakepop fairies dancing in my head,
Sunday
