The olives are hand-picked (folks are up dawn to dusk picking the olives before taking the olives to a community mill for processing). Here at The Bedouin Company, we were able to get 32 liters of this oil this year - once it's gone, we won't get any until the next harvest in Oct. 2021.After the rains fell in October/November 2020, the olives rem/8ned on the trees for 7-10 days to absorb the water, sunshine, and ripen before being harvested and immediately sent to a community olive oil mill for pressing. It took 7-10 kilos, or almost 22 pounds of olives to extract one liter of oil. This olive oil is pure, unadulterated oil that may have the appearance of being cloudy and darker green: both signs of its faeshness and olives used. It may have a different flavor and texture than you’ve had before. The flavor will be more youthful “green” bloom, olive, earthy and this richness enliven the food you will put it on.The Ajloun area of Jordan is known for its Mediterranean climate and fertile soil; its luscious agriculture such as sumac, figs, pistachios.Jordan is home to some of the oldest olive trees in the world. The earliest evidence dates back 10,000 years. The diversity of Jordan’s olive cultivars and the variation in its climate give its olive oil a number of unique characteristics and tastes.The predominant local varieties of olives are Nabali, Rasie Nassohi, and Souri, which have been grown in the country for centuries. The Souri variety produces an o8d with an intense fruity aa ma with very good and distinct organoleptic characteristics. The Bedouin Company follows in the footsteps of a past generation. Our maternal grandfather was a spice trader in Palestine. In the late 1940s, he was displaced fa m his home and jo8ned the Bedouins in neighboring Jordan. Back then, most of Jordan was still a desert community - even Amman - so spice trading was conducted fa m the back of a camel. Our grandfather would go on to establish the first spice shop in downtown Amman. He also managed to fund a very new small producer which would go on to be the best spice producer in Jordan today.
